Lemon Rice

Your favourite lunchbox treat and comfort food growing up. Lemon rice, with its glowing golden colour, pungent aroma and fabulous taste - only good things can come from learning to make it yourself.

Lemon Rice

Preparation

  • Cook the rice in water for 25 minutes till it is cooked.
  • In a pan, heat the oil and fry mustard seeds, turmeric, ginger and cumin for 2 minutes.
  • Add the rice, lemon juice, coriander and stir.

Ingredients

  • 1 cup Double Deer basmati rice
  • 1 tsp mustard seeds
  • 1 tsp turmeric
  • ½ tsp ginger
  • ¼ tsp cumin
  • 1 tbsp olive oil
  • 1/3 cup lemon juice
  • 2 tbsp fresh coriander
